After an hour of viewing ice castles and igloos at Quebec City’s
famous Winter Carnival, the temp failing to break the ten-degree
barrier, Denise and I returned to the crackling hearth of our
hotel’s café. We nestled up to the flames, cup in hand, and sipped
what we immediately realized was the most incredibly rich coffee
we’d ever experienced. Naturally we attributed our good fortune to
snow nymphs, who had extracted the blessed brew from some rare,
ethereal bean. We told this theory to our waiter, and he laughed
cordially, explaining the hotel actually imported freshly roasted
coffee from a small roaster in the States. We jotted the name down
on a napkin. Once home, we began ordering small batches from this
same roaster and soon discovered other such aficionados across the
country. Thus began our love affair with that most delicious of
beans, the coffee bean. The year was 1982.
Many Javas and Joes have passed
our lips since then, and we’ve refined our palates with countless
coffee tastings, coffee festivals, and experimental roastings that
filled our kitchen with smoke. Our first experience involved a
hot-air popcorn popper. This contraption works well, but our desire
for perfection quickly pushed us past the limits of the kitchen
counter. The more we learned, the more we wanted to know. Our new
passion was taking us into unknown territories.

In the early
Nineties, I became so enthralled with roasting the various coffees
of the world, all with distinct “sweet spots” I knew they must have,
that I attended a coffee roasting school in San Francisco. Soon
after I was roasting on and off with friends who did so commercially
for coffee shops and retail stores. I traveled the country, studying
the craft of roaster virtuoso's and acquiring techniques necessary
for roasting my own masterpieces. The dream of Adventure Coffee
Roasting was born.
